Beautiful gluten-free and vegan pink pitaya🌺 fudge bars 😍🙌🏼

Not only will these fudge bars brighten up your day🌸☀️ but they also taste incredibly delicious😋 and are full of antioxidants and nutrients! Plus the recipe is completely vegan and gluten free!

🌺Ingredients🌺⠀
For the base:⠀
• 1/4 cup almonds⠀
• 1/4 cup pecans⠀
• 2 dates, pitted⠀
• 1/2 teaspoon vanilla extract⠀
• Pinch of salt⠀
⠀
For the fudge layer:⠀
• 3/4 cup cashew butter (raw cashews blended in a high-speed blender until creamy consistency is formed)⠀
• 1/4 cup coconut oil, melted⠀
• 1/4 cup maple syrup⠀
• 3 Tablespoons organic pink pitaya powder⠀
• 1 Tablespoon lemon juice⠀
• Pinch of salt⠀

🌺Directions🌺⠀
1) In a food processor, add all ingredients for the base. Blend until crumbly consistency.⠀
2) Transfer the crumble into a container and press to make a flat layer.⠀
3) Into a bowl, add cashew butter, coconut oil, maple syrup, lemon juice and salt. Stir to combine to make white fudge.⠀
4) Save 2 Tablespoons of the white fudge in a separate bowl and add pink pitaya powder to the remaining fudge.⠀
5) Pour the pink fudge mixture over the base and flatten. Pour remaining white fudge over the top layer and create a swirl.⠀
6) Freeze for 1 hour. Cut and enjoy!
