Not only will these fudge bars brighten up your dayđ¸âď¸ but they also taste incredibly deliciousđ and are full of antioxidants and nutrients! Plus the recipe is completely vegan and gluten free!Â

For the base:â
⢠1/4 cup almondsâ
⢠1/4 cup pecansâ
⢠2 dates, pittedâ
⢠1/2 teaspoon vanilla extractâ
⢠Pinch of saltâ

For the fudge layer:â
⢠3/4 cup cashew butter (raw cashews blended in a high-speed blender until creamy consistency is formed)â
⢠1/4 cup coconut oil, meltedâ
⢠1/4 cup maple syrupâ
⢠3 Tablespoons organic pink pitaya powderâ
⢠1 Tablespoon lemon juiceâ
⢠Pinch of saltâ

1) In a food processor, add all ingredients for the base. Blend until crumbly consistency.â
2) Transfer the crumble into a container and press to make a flat layer.â
3) Into a bowl, add cashew butter, coconut oil, maple syrup, lemon juice and salt. Stir to combine to make white fudge.â
4) Save 2 Tablespoons of the white fudge in a separate bowl and add pink pitaya powder to the remaining fudge.â
5) Pour the pink fudge mixture over the base and flatten. Pour remaining white fudge over the top layer and create a swirl.â
6) Freeze for 1 hour. Cut and enjoy!
