Gluten-Free & Vegan Pink Pitaya Pancakes Recipe!

Gluten-free and vegan pink pitaya mini pancakes recipe in collaboration with!

servings: 8 3-inch mini pancakes⠀

🌼Ingredients🌸 ⠀
- 1/2 cup gluten-free oats⠀
- 1 medium banana⠀
- 1 Tbsp our @nutritionrestore pink pitaya powder⠀
- 2 Tbsp arrowroot powder⠀
- 5 Tbsp plant-based milk⠀
- 1 tsp baking powder⠀
- Pinch of salt⠀
- Maple syrup⠀
- Fruits and nut butter of your choice for toppings⠀

1. Into a blender, add oats and blend to make oat powder.⠀
2. In a bowl, place banana and mash until smooth. Add oat powder, pitaya powder, arrowroot powder, plant-based milk, baking powder and salt, and mix well.⠀
3. Lightly grease a pan over low-medium heat. Pour about 1/4 cup of batter onto the pan into a round shape. Flip when edges become dry.⠀
4. Garnish with fruits and nut butter. Drizzle maple syrup and enjoy!⠀
